3 green side dish recipes

Happy St. Patrick’s Day! Since my days of St. Paddy’s Day bar-hopping sprees are clearly on hold until the kids are grown and out of the house, it’s all about festive green side dishes today! Need main entree inspiration? Add chicken or shrimp to any of these recipes and make it a quick and healthy, meal, sure to please even the pickiest leprechaun!

 

Balsamic Brussels Sprouts

Ingredients

1/2 lb. Brussels sprouts, trimmed and halved lengthwise
1 tbsp.olive oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 tbsp. balsamic vinaigrette

Let’s Do This!

1. Preheat oven to 450°

2. Combine all ingredients in a container with a secure lid, and shake it up!

3. Once sprouts are coated thoroughly, pour mixture onto a greased jelly-roll pan, and bake at 450° for 15 minutes (or until Brussels sprouts are tender and browned) stirring occasionally.


Asparagus with Feta, Balsamic Vinegar and Roasted Tomatoes

Ingredients

1 lb. asparagus, trimmed
1 tbsp balsamic vinegar
1 1/2 cups halved grape or cherry tomatoes
1 tbsp olive oil
1/4 teaspoon kosher salt
1/4 teaspoon pepper
1 ounce crumbled feta cheese

Let’s Do This!

1. Preheat oven to 425°

2. Combine tomatoes, salt, pepper, balsamic vinaigrette, and olive oil in a small bowl and gently toss until tomatoes are covered in mixture.

3. Pour tomato mixture onto greased pan, and bake for 4 minutes.

4. Add asparagus to pan, and coat with tomato mixture and bake for 8-10 minutes.

5. Remove pan from oven, and sprinkle dish with feta cheese.

Kale Caesar Salad with Homemade Croutons

Homemade Croutons Ingredients

2-3 slices of whole wheat or whole grain bread
2 tbsp olive oil
1 tbsp minced garlic
1 tsp garlic salt

Let’s Do This!

1. Preheat oven to 450°

2. Slice bread into small cubes, and place cubes into a mixing bowl

3. Combine all remaining ingredients into bowl and carefully coat bread cubes

4. Pour bread cubes and onto a greased (or greased foil-lined) jelly-roll pan, and bake at 450° for 10-15 minutes (or until desired crispiness) rotating pieces occasionally.

5. Remove from oven, and let croutons sit until room temperature

Salad Ingredients

1 bunch kale shredded (whichever type kale you prefer)
1/2 cup diced roma tomatoes
1/2 cup-1 cup Caesar dressing (I prefer oil-based dressings, rather than cream-based)
1/4 tsp fresh ground pepper
Pinch of kosher salt

Let’s Do This!

1. Mix all ingredients in a container with a lid (or salad spinner).

2. Once salad is coated and mixed, pour into serving bowl, and sprinkle with croutons, and ENJOY!
